Good evening!

Quick post and run of today’s eats before bed — I’m EXHAUSTED after running, Zumba and girls’ night out!  I’ll be back tomorrow with the full recap 🙂

Breakfast was delicious and incredibly filling — a whole wheat bagel with egg whites and cheese:


I also had two cups of Green Mountain Coffee‘s (fair trade!) pumpkin spice coffee with skim milk and Splenda.  Please forgive the styrofoam cup; my reusable travel mug (pictured behind the styrofoam aberration) had some gross-tastic gunk on the bottom I couldn’t clean out 😦


Delicious!  It didn’t taste very pumpkin-y, though; it was like chai tea and apple cider had a baby.

Lunch was a ginormous salad with roasted red peppers, tomatoes, broccoli, carrots, cucumbers, red onions, and a little bit of cheese:


So good, and so filling!!  I don’t think my photo does it justice!

Since I’m thinking like an “after” now, I knew that I’d be having dinner out and wanted to go with a lighter lunch so I could order what I wanted without feeling deprived or guilty.

My pre-workout snack was a handful of dried cranberries:


These cranberries are sweetened with apple juice, not sugar, which I prefer.  The calorie counts are about the same (around 130-140 calories for 1/3 cup), but I think Craisins and other sweetened dried cranberries can be unpleasantly sugary.  You have to have some tartness if you’re eating cranberries, you know?

Dinner was the aforementioned lovely night out with the girls.  We went to a Belgian restaurant, Le Petite Abeille, and it was wonderful (both the food and the company)!  Fun fact: did you know the Smurfs are Belgian?

I decided to go with a traditional Belgian dish, stoemp, which is basically mashed potatoes with some other veggie added (I picked spinach) and a pork chop.  I also got a side of grilled green beans:

We also ordered some fries for the table — because really, how can you not at a Belgian place? — but surprisingly, I didn’t have any!


While we were VERY tempted by the waffles (at least I was!), we were all pretty full and didn’t order dessert.  I’d say it was a pretty successful day of eating!

  1. Oohh tell us more about Zumba! I keep hearing about it and it sounds like a blast! Can’t wait to hear your full recap – running, zumba & girls night.. thats a lot in one day!
